The amount of beluga caviar exports to Turkey has been decreasing during the last decade, so that during the years 1370 to 1385, we had a decrease of 119 tons in the exports of this product. The decrease in sturgeon stocks, the growth of smuggling and fraud in the product, and the entry of farmed European caviar into the world markets are among the factors that have caused a decrease in caviar exports in the last decade. After China, Iran has been ranked second among the countries of China, Korea, and Denmark. However, after 2004, the caviar export of our country found a downward trend due to the establishment of the Caspian Sea caviar quota system by the Convention on International Trade in Rare Species. According to statistics, Iran's caviar export decreased by 37% and reached 13.3 million dollars after the quota system was established and then banned.

Caviar export to Türkiye

Traders and businessmen usually export caviar in two ways, retail and wholesale. The export route, while being lucrative, has a lot of complexity. Because it requires export marketing, obtaining necessary permits and company registration.

Therefore, traders often turn to wholesale and export caviar. The border countries of the Persian Gulf, Qatar, UAE, Oman, Turkey, Japan and the countries of the European Union are among the export destinations of Iranian caviar.

Iranian caviar has long been considered a high-quality brand all over the world, and many important restaurants and hotels in the world mention Iranian caviar as a special part of their menu when serving food. Caviar produced in the country is considered among the best in the world due to its special quality, and due to the presence of competitors such as China and Russia, it still maintains its special position.

The demand for buying Iranian caviar has turned it into an important component in gaining currency for this product for the country. In a situation where the price of oil is decreasing and fluctuating and the sanctions are trying their best to reduce its sales to zero as the country's most important export product, paying attention to the export of caviar and its importance in injecting foreign currency into the country can be considered an important point.

Caviar international licenses
In order to export caviar, it is necessary to get a number of licenses and certificates, certificate of origin from the Chamber of Commerce, veterinary certificate, CITES permit, veterinary permit and transport permit, among which the CITES permit is an international permit. Due to the fact that sturgeon is at risk of extinction and is one of the critically endangered species, SITES member countries undertake to refrain from catching sea fish and are only allowed to buy and sell caviar in the world market with farmed caviar. After approval of the sturgeon breeding center by Sites, that center will be allowed to export. After completing the list of above permits, caviar is transported to Imam airport and from there it is sent to the destination country along with packaging and dry ice.
